150g self rising flour
150g plain flour
2 tspn ground Cinnamon
1 egg beaten
Set oven at 160 degrees C
Sift flour and Cinnamon into a large bowl
In a separate bowl, mix butter and sugar until smooth, add egg and mix well
Stir in the dry ingredients and mix into firm dough. Lift on to a lightly floured board, then knead until smooth. Roll to 5mm thickness and cut into shapes and place on a greased oven tray.
Bake in the preheated oven until light golden colour, 10-15 minutes then let cool and harden.
Serve with tea or coffee
